  • 1–2 cups full-fat kefir (or coconut kefir for dairy-free)
  • Generous pinch saffron threads (~15–30 mg) — see info on dosing below.
  • 1–2 tbsp butter powder, melted grass-fed butter or ghee (or coconut oil for dairy-free)
  • Splash vanilla extract
  • Pinch sea salt
  • 1-2 tsp Sunflower Lecithin – to emulsify the fats
  • Sweetener options: I use a tsp glycine + 1–2 tsp inulin (no blood sugar spike + see brain/gut benefits below). You can use any of your favorite sweeteners to taste. (monk fruit, stevia, honey, maple syrup etc.)
  • Optional but highly recommended crunch: 1-2 tbsp cacao nibs + 1-2 tbsp bee pollen 

Instructions: 

  1. Add saffron to your kefir and stir. Cover and place in fridge for at least an hour. (I prefer over night). This is how mine looks in the morning:

Tip: crumble saffron into very small pieces if using a milk frother. Saffron threads can get tangled  

  2. Add all ingredients, Quick stir Milk frother or shaker bottle → 10 seconds → drinkable velvet that tastes like a vanilla-butter latte     that turns your brain golden from the inside out.  (omit cacao nibs and bee pollen until after mixing, just stir in)

Saffron Daily Dose

  • 15–30 mg (about 8–15 threads) = therapeutic sweet spot, the perfect daily dose.
  • Up to 100 mg/day is still safe in studies.
  • Over 5 g (5,000 mg) in a single dose can be toxic — you’d have to try very hard to hit that! Each thread is 1-2 mg.

How to Measure Without a Gram Scale

  • 10–15 average saffron threads = ~15–30 mg
  • A small pinch (thumb + finger) = ~15 mg (perfect for 1 serving)
  • A generous pinch = ~30 mg (for stronger flavor/glow)
  • For a quart batch (3–4 servings): Start with a couple generous pinches total (soaked overnight for that beautiful starburst color). Your daily serving will land in the sweet spot. Adjust by eye — if it’s not a pretty golden yellow in the morning, add a few more threads next time!

    1. You can definitely store it in the fridge. I do that but if I put a lot of “extras” in I put them in just before drinking.
