Hotel Room Cooking – One Pot Meals

When I go to Tijuana for treatments from the Holistic Health Clinic I stay at the Grand Hotel, located in the same hotel as the clinic.

This leaves me without a kitchen for weeks at a time. My most recent stay was for almost 4 weeks. Rather than eat restaurant food multiple times a day for 25 days straight I prepared a lot of my food right in my hotel room. I used a hot pot/rice cooker for all of my cooked meals and even simmered chaga chunks for 6 hours. Check out my creations below!

Ground Beef with Onions, Mashed potatoes and Avocado.

I used butter to cook the onions, added in the ground beef, cooked then poured into a bowl. I boiled the potatoes and mashed them with a fork, and sliced avocado to top it with. I used a couple spices I bought at the Smart and Final near the hotel but will take more of my own spices next trip. I also used salt and pepper and a little hot sauce.

First I cooked the rice in the pot, poured that into a bowl, then cooked the beef with onions and poured the rice back in and heated it through, with salt, pepper, chili and lime spice. Next year I will bring smoked paprika and chipotle chili pepper spices.

Pulled Pork on Rice

I don’t eat much pork but bought canned pulled pork from Walmart in TJ and I was shocked at how good it was! I chose one with minimal ingredients and I would never have known it was from a can. This pork had the flavor and texture of freshly made pulled pork! It was so good I attempted to bring a couple cans home but they got confiscated at the Toronto Airport!

I also made kefir daily in my hotel room and brought my elixir powder mix blends and my milk frother. Making elixirs was a breeze! I used the hot pot to reheat leftovers from restaurants as well.

Sure I ate in restaurants as well but not near as much as I would have without my make-shift hotel kitchen. I boiled eggs and made tea in that hot pot as well. My next trip to TJ may be in October so am already planning more hot pot creations.
