Ingredients
- 2 avocados
- 2 eggs
- 2 cups shredded cheddar or cheese of choice*
Instructions
- Add avocado, egg, and cheese into a medium bowl. Mash with a fork and mix until well combined.
- Oven: Preheat oven to 400ºF. Line a sheet pan with parchment paper.
- Form into 2-3 balls for a patty size or 8-10 balls for bite size patties, and transfer onto parchment paper. Use your spoon to flatten and shape.
- Sprinkle with your choice of spice (I use cayenne and lemon pepper).
- Bake for 20-30 minutes or until golden. Turn half way through cooking time.
This is how they should look after turning. Continue baking until golden brown. If you bake too long they will become dry.
Notes
Cheese: We sometimes prefer using 1 cup to 1 1/2 cups of cheese because it is so rich with fat. We also like to use a combination of cheeses such as: garlic and cheddar or jalapeno and mozzarella. Any cheese will work!
Spice: You can use any spices you wish. We have experimented with cayenne, garlic and lemon pepper and squeezing lime juice into the mixture.
Timing: If you are using an air fryer oven it will be faster so keep your eye on them, once golden brown check them, they will be soft in the middle.
These are good on their own, hot or cold, and you can try with toppings or dips like sriracha mayonnaise, hummus or sour cream.

Going to try this. Tried something similar with cauliflower but you cut the whole cauliflower like a steak dip in egg and like yours add cheese. Wonderful. Thanks for the recipe
